Pistachio is no longer just a passing trend. It has become one of the fastest-growing flavours in the premium pastry market. According to a study by Bridor, 70% of Spanish consumers enjoy pistachio pastries, confirming the growing popularity of this ingredient and its increasing presence in cafés, bakeries and specialty outlets.
This preference forms part of a broader trend that Bridor describes as "ultra indulgence"—products featuring generous fillings, eye-catching toppings, contrasting textures and strong visual appeal. Inspired by the aesthetics of food porn and the growing influence of social media as a showcase for gastronomy, these creations are designed to deliver an experience that begins with the eyes and continues with every bite.
"Indulgence is no longer just about taste; it has become a complete visual and sensory experience," says Blandine Daugenet, Bridor's EMEA Marketing Director. "Consumers are looking for products that surprise them at first glance and deliver a variety of textures and flavour nuances in every bite."
This trend is being driven both by adult consumers seeking moments of indulgence and by younger generations. Drawing inspiration from food porn culture and the growing role of social media in shaping food trends, creamy fillings, contrasting textures and visually striking finishes have become key elements in capturing consumers' attention.
Pistachio, Praline and Hazelnut: The Flavours Defining the Trend
To meet this growing demand, Bridor is expanding its premium pastry range with two new products focused on indulgence and sensory experience.
The flagship launch is the Pistachio & Chocolate Finger, a 90 g ready-to-bake pastry made with pure butter puff pastry, a generous pistachio filling with chocolate chips accounting for 32% of the product, and topped with roasted pistachios to enhance both flavour and texture.
The range is complemented by the Praline & Hazelnut Roll, a 100 g ready-to-bake pastry combining crispy puff pastry with a generous 28% hazelnut and almond praline filling. Finished with chopped hazelnuts, it not only adds texture but also delivers strong visual appeal. In fact, 75% of Spanish consumers consider this product visually attractive. The product was also awarded the Snacking d'Or 2026 in France.
Both launches respond to the growing demand for more indulgent and visually appealing bakery products. According to Bridor's study, 91% of Spanish consumers would like cafés and coffee shops to offer a wider selection of premium pastries featuring generous fillings or eye-catching toppings.
